Vegan Stuffed Peppers
Ingredients:
1 Cup of Meatless Meat Crumbles and/or Cooked Rice or Quinoa
1 Cup of Rotel or Homemade Stewed tomatoes with Chile
Cilantro
Olive Oil (optional)
Bread Crumbs (optional)
Directions:
Use vegan meatless meat crumbles and/or cooked rice or quinoa, mix with with Rotel or homemade stewed tomatoes with chili, and sprinkle with lime juice. Cover with a shredded vegan cheese made for melting, or drizzle with olive oil and/or sprinkle with bread crumbs. Grill or roast in the over until melted and hot. Top with fresh cilantro after grilling.

Vegan Stuffed Pepper Recipe:
Stuff peppers with sautéed mushrooms, broccoli, basil, onion, garlic, tofu (if you eat soy products), and some rice or couscous. Yum.
Sprinkle with Panko bread crumbs if you want some crunch.
Black beans, quinoa, corn and mashed butternut squash to bind
Couscous with chick peas
Fried rice
Stuff peppers with riced cauliflower and stewed tomatoes
You can fill with steamed, crushed potatoes and then top with chili, salt, lime juice, chives, onions or hot sauce
Stuff peppers with spinach tomatoes and corn.

Mashed sweet potatoes & hot sauce
Seitan & mushrooms
Hummus and fresh squeeze lemon juice, sprinkled with fresh chives or parsley

Most of these ideas can be eaten cold or you can grill or roast them to intensify the flavors and serve them hot (that's our preferred way, but sometimes a pepper stuffed with fresh hummus and lemon juice with parsley is just perfect for a hot summer afternoon.
