Vegan Stuffed Peppers

Here is a Vegan Stuffed Peppers Recipe below, including lots of delicious variations and ideas for making the best vegan stuffed peppers. These are some great vegan stuffed pepper recipe ideas if you are vegetarian or vegan, or if you have dairy allergies. You can stuff any pepper, although some of our favorite pepper stuffers are Jalapeños, the Mini Orange Bell Pepper, Red Cherry Hot peppers, Pimento Peppers, the large Beaver Dam Pepper. Of course, all of our hatch chiles and green chiles are also great for roasting, peeling and stuffing with cheese and frying into relleños. Green chiles usually have thicker skin, so roasting and peeling is good to remove the chewy, sometimes papery skins. Plus, roasting enhances the flavor! 

Vegan Stuffed Peppers Recipes

Below are all of our Vegan Stuffed Pepper recipe ideas:

Vegan Stuffed Pepper Recipe Idea #1: 

Ingredients:
1 Cup of Meatless Meat Crumbles and/or Cooked Rice or Quinoa
1 Cup of Rotel or Homemade Stewed tomatoes with Chile
Cilantro 
Fresh Lime Juice
Olive Oil (optional)
Bread Crumbs (optional)
Vegan Cheese (optional)

Directions:
Use vegan meatless meat crumbles and/or cooked rice or quinoa, mix with with Rotel or homemade stewed tomatoes with chili, and sprinkle with lime juice. Cover with a shredded vegan cheese made for melting, or drizzle with olive oil and/or sprinkle with bread crumbs. Grill or roast in the over until melted and hot. Top with fresh cilantro after grilling.

Vegan Stuffed Pepper Idea #2: 
Stuff peppers with sautéed mushrooms, broccoli, basil, onion, garlic, tofu (if you eat soy products), and some rice or couscous. Yum.
Sprinkle with Panko bread crumbs if you want some crunch.

Black beans, quinoa, corn and mashed butternut squash to bind

Couscous with chick peas

Most of these ideas can be eaten cold or you can grill or roast them to intensify the flavors and serve them hot (that's our preferred way, but sometimes a pepper stuffed with fresh hummus and lemon juice with parsley is just perfect for a hot summer afternoon.
