Brunswick cabbage is a cold-hardy fall/winter variety that is also heat resistant. It has good flavor fresh and is a favorite for making sauerkraut. The solid heads can weigh 6-10 lbs. These are also delicious in our Spicy Cabbage Salsa Recipe!

Cabbage seeds can be planted outdoors.

Sow seeds 2-3 weeks before the last frost date.

Plant seeds 1/4" deep and 3" apart. Seeds should come up in  7-14 days. Thin seedlings to 18" apart. 

Keep cabbage free of weeds. This is especially important when they are small because the weeds will take nutrients away from the cabbages.

First imported to the U.S. in 1824, Brunswick cabbage history says all cole crops were exported under the Brunswick name at that time. This German heirloom, a large drumhead, is becoming rare as winter cabbage growing decreases. For many years it was a favorite for making sauerkraut. 

Features.

German heirloom with dense, firm drum-shaped heads packed with flavor.
An excellent late-season variety, the large, 6-10lb. drum-shaped heads are dense and firm. A favorite choice for homemade sauerkraut. Cabbage lasts longer in the fridge than most vegetables. If cabbage is properly stored, it can last from 3 weeks to up to 2 months in your refrigerator. In optimum root cellar conditions, it can even last longer. Do not remove the outer leaves nor wash them until ready to use. It’s versatile and can be used for soups and salads, shredded into coleslaws, stir-fried, and fermented into sauerkraut. It can be stuffed whole or used as individual cabbage leaves, steamed, boiled, fried, roasted, and grilled.

 

Benefits.

Cabbage offers many health benefits that are similar to broccoli.  It is high in beta-carotene, vitamin C, and fiber. Also, cabbage may reduce the risk of some forms of cancer including colorectal cancers.

Cabbage is good for weight loss and beautiful skin. There are only 33 calories in a cup of cooked cabbage, and it is low in fat and high in fiber. Cabbage also helps keep skin looking healthy because it is rich in antioxidants like vitamin C and beta-carotene.

These seeds are great for winter sowing!

I started these using the winter sowing method you had in your blog, what a great way to get germination in the extra-early spring! Nearly every seed sprouted so I gently separated them and planted them in a well-composted garden bed and they took off! We donated many of the heads, and made coleslaw and cabbage salsa for tacos out of many of them. Delicious.

Nice big heads, easy to grow, nearly every seed sprouted. I will grow these again. Great for making sauerkraut, or adding to stir fries. I read the previous review and now I want to make cabbage salsa, that sounds awesome. I found the recipe in your blog, thanks!

Cabbage salsa rocks

I grew these and made cabbage salsa with my hot peppers and tomatoes, also grow from your seeds, and it was awesome. Great for parties with chips or on top of tacos or tostadas.
