Grow this hot Hatch Chile for its traditional New Mexico flavor and great heat. Roasted pods are perfect for green enchilada sauce. The small 5” long chiles grow on plants that are 30” tall and produce well in high temperatures. Hatch Green X-Hot Barker's will be its hottest when grown in a stressful environment – they like it hot and dry. Chile heat levels are affected by high daytime temperatures and limited water supply. Chiles grown in hot climates with days above 95°F and drought-stricken will taste hotter than those grown with cooler days and ample water.

In early spring, start seeds indoors 8 weeks prior to warm nightly temperatures. Place the seeds in sterile media and cover 1/4” deep. Provide 85°F bottom heat, bright light and keep moist at all times. Seeds will germinate in 7 - 21 days. Transplant seedlings into pots and grow until there are 6 true leaves on the plant. Plant them directly into rich soil, 30” apart or into large 5 gallon containers. Harvest chiles when they are green. If left on the plant a couple more weeks, the chiles will turn red at full maturity.

 

*Technically, to call any of these chiles "Hatch Chiles," they must be grown in the Hatch region of New Mexico. But we still think they taste great when grown all over the world, plus fresh homegrown chile is always extra-delicious and it's often hard to get New Mexican chile around the world! So this is way you can grow a little bit of New Mexico in your garden, no matter where you live.

Very thick skinned, quality pepper. I have a little section of my freezer dedicated to Hatch for green chili in the winter. Nice surprising heat that is almost overpowering and then quickly dissipates which is nice 😊 plants were huge this year

A real favorite

I grow multiple NM peppers, these stand out every year. Plants get loaded early season and will produce thru the fall in Central Texas. Great heat and if you can manage to not eat them first, they dry well an make a great sauce or powder. Germination rates are 95% plus every year. First seeds I add to my order every year.

Best of two worlds

I purchased a packet of Barkers X Hot seeds to grow over winter under lights to see what I want to get serious with now... vigorous growers, I just transplanted one into a 5 gal pot and had to trim some not quite mature peppers that would have been partly in soil otherwise so stuffed them with pepper jack cheese and broiled them- EXCELLENT! Jalapeno hot but with the New Mex flavor we all love. Definitely starting more of these this week. I rate these A++
