Hatch Green Medium - Big Jim
Authentic green chile flavor and medium heat! This heirloom variety has been grown in the Hatch Valley of southwest New Mexico for over a century. Hatch is a term describing several different green chile varieties ranging from mild to extra hot. This Hatch Green variety offered here is Medium hot and perfect for roasting. Then use it every day in all your New Mexico inspired dishes for breakfast, lunch, and dinner! 

Chiles are 7" long on productive 30” plants. Easy to grow and can be started indoors for an earlier harvest, or directly sown into warm moist soil and kept wet until germination. Capsicum annuum (75 days) Heirloom - Open-Pollinated

Heat Level: Medium  Scoville 2000 - 4000

~ Packet contains 30 seeds. 

In early spring, start seeds indoors 8 weeks before warm nightly temperatures. Place the seeds in sterile media and cover 1/4” deep. Provide 85°F bottom heat, and bright light, and always keep moist. Seeds will germinate in 7 - 21 days. Transplant seedlings into pots and grow until there are 6 true leaves on the plant. Plant them directly into rich soil, 30” apart, or into large 5-gallon containers. Harvest chiles when they are green. If left on the plant for a couple more weeks, the chiles will turn red at full maturity.

Hatch Red Medium - Joe E. Parker. This fabulous tasting chile produces very heavy yields of chiles that can be harvested in the green or red stage. They have thick flesh and medium heat. We sell Joe E. Parker as 'Hatch Red' because it is known for its huge second crop of red chile after the first crop of green chile is picked. This could easily become your new favorite! 

Another great choice is Big Jim Legacy. This green chile has an incredible flavor with thick flesh and a mild to medium heat.  The big pods are beautiful and make great stuffed rellenos.  A choice that you are sure to love!

Extra large chile!

I love these huge pods, they are easy to roast, easy to spot on the plants, easy to peel, and DELICIOUS! Totally worth it. I only wish I had a full field of these growing. :) Seeds germinated quickly, plants grew nicely. Just picked my first pods yesterday (July 31st) which is awesome!
