Green Chile Sauce
Goes great on everything! Use it on top of burritos, roasted vegetables, potatoes, tacos, sandwiches, burgers, or use it as a salsa with chips.
Ingredients:
4 Tbs butter
1/2 yellow onion (diced)
6 Tbs all purpose flour
1Tbs chicken bullion
1 1/2 C water
1/2 cup chopped hatch green chile (roasted)
salt and pepper to taste
Directions:
1. In a medium saucepan, melt butter and add in onions. Saute onions until they become fragrant and translucent.
2. Once onions are cooked, turn down the heat to low. Add in flour and bullion and whisk. Should be a paste like consistency. Next let saute while whisking constantly so the flour doesn't burn. Then slowly add in the water. Pour a 1/4 cup at a time and whisk constantly so there are no lumps, continue until water is completely incorporated.
3. Add in your chopped hatch chiles and season to taste. Let the sauce cook until it becomes a gravy-like texture for about 8 minutes, and enjoy!
