Roasted Green Chile Chicken

Roasted Green Chile Chicken Recipe

 

Great for lazy days you want to throw things in a pot and walk away.

Ingredients:
1 tsp Oregano
1 tsp Cumin
3 pounds Chicken (bone-in preferred)
4 slices of bacon (chopped)
1/2 Yellow onion (large dice)
1 10oz. can crushed tomatoes (or finely chopped fresh tomatoes)
1/2 C chopped hatch green chiles (roasted)
Cilantro for garnish

Instructions:
1. In a Dutch oven or heavy bottom pot. Bring to medium heat. Throw in dried spices and roast for 2 minutes, stirring constantly so they don't burn (no oil). Once spices become fragrant after 2 minutes, toss in bacon and onions and let cook. (If the bacon isn't creating enough oil to keep the onions from burning add in 1 Tbsp of oil).

2. Once onions have turned translucent add in your chicken, tomatoes, green chile, and salt. Fill the pot up with water to cover 3/4 of the chicken.

3. Cover and let cook on low heat for 2 hours.

4. Serve with rice and enjoy!
